Austrian Meatballs
Faschierte Laibchen (Austrian Minced Pork Rissoles)
250g ground pork
1 onion
1 egg
½ bunch of parsley
1 pinch of ground caraway seeds
1 pinch of marjoram
1 pinch of thyme
1 day-old dinner roll
1 teaspoon flour
1 garlic clove, pressed
1 pinch nutmeg
vegetable oil for frying

Soak the roll in water, then squeeze the water out and crumble the bread. Finely chop the onion and sweat it in a little oil, then add to the bread with the meat, the egg, the flour and the spices. Season it with salt and pepper. Mix everything well together. Form patties and fry them in oil until golden on both sides. Serve with potato puree and a green salad (make it with Boston lettuce, spring onions, cucumbers, red radishes and dill, sunflower oil and apple cider vinegar).
