Viking Village's Seafood Show 'Hookin' & Cookin' returns to " A Little Bite of Italy," Surf City, New Jersey. Chef Francis Pons from France was on hand to cook up this month's fish, croaker. The croaker got their name from the repetitive throbbing or drumming sounds they make.
With the experience Francis gathered from the Mediterranean Sea and the fish he catered to, the croaker was no problema. A simplistic fantastic recipe, very creative and delicious.
